Strawberry Margarita Pie
- CRUST:
- 2 c. crushed pretzels
- 1 stick of butter, melted
- 1 T. sugar
- PIE:
- 16oz. cream cheese
- 1/3 c. lime juice
- 14 oz. sweetened, condensed milk
- 8-10 strawberries, diced
- 1/4 c. tequila
- 2 T. triple sec
- Preheat oven to 350F.
- Combine all crust ingredients and press into 9″ pie plate. Bake 10 minutes and allow to cool completely.
- After crust has cooled, beat cream cheese with a mixer until fluffy.
- Combine lime juice and mix until there are no lumps.
- Add condensed milk and strawberries. Mix for 2 minutes on high speed.
- Stir in tequila and triple sec.
- Taste for the need to add more strawberries and/or booze.
- Pour into cooled crust and freeze until serving, preferably overnight.
- Allow to come to room temperature about 10 minutes prior to eating. At that time add lime and strawberry garnishes.
