Strawberry Margarita Pie

  • CRUST:
  • 2 c. crushed pretzels
  • 1 stick of butter, melted
  • 1 T. sugar
  • PIE:
  • 16oz. cream cheese
  • 1/3 c. lime juice
  • 14 oz. sweetened, condensed milk
  • 8-10 strawberries, diced
  • 1/4 c. tequila
  • 2 T. triple sec
  1. Preheat oven to 350F.
  2. Combine all crust ingredients and press into 9″ pie plate. Bake 10 minutes and allow to cool completely.
  3. After crust has cooled, beat cream cheese with a mixer until fluffy.
  4. Combine lime juice and mix until there are no lumps.
  5. Add condensed milk and strawberries. Mix for 2 minutes on high speed.
  6. Stir in tequila and triple sec.
  7. Taste for the need to add more strawberries and/or booze.
  8. Pour into cooled crust and freeze until serving, preferably overnight.
  9. Allow to come to room temperature about 10 minutes prior to eating. At that time add lime and strawberry garnishes.
