Les Trois Provinces-  Le Montsaugeonnais

On a road trip to Champagne, we were seeking a halfway stop for the night with the only requirement being that the hotel was clean and the food was tasty. Luckily we found Le Vauxois, a simple hotel, but with a phenomenal restaurant, Les Trois Provinces.

An extremely rainy evening had us turning up in car travel clothes- simple denim and trainers. We were quite surprised after seeing the simplicity of the hotel, how lovely the restaurant was complete with very serious, well-dressed (and well attentive) staff.

As we were killing the evening, a cozy country resto couldn’t have been a better choice as we sampled French country cooking with a gourmet presentation. I started with the “bon bons de Lagres” which were essentially Malakovs, or cheese bombs. Presented like a game of mousetrap and served with an abundance of dipping sauce, this starter was wonderful and could have been a main itself.

The Gentleman opted for an escargot filled ravioli. He raved about it and offered me a taste, but escargot is one of the few things I can’t bring myself nibble after seeing so many in my garden.

My main plate was an enormous steak, cooked perfectly and served with buttery potatoes and an abundance of mixed veg. Heaven.

Similar in set-up, but different in main was the goose neck. It seemed to be a resto favorite as everyone at a neighboring table also enjoyed this feast.

We skipped sweet dessert in favor of a shared cheese plate, but were presented with these sweet nibbles nonetheless. The cannelle was fun and the caramel tuille was incredibly crunchy, you could hear them being chomped throughout the resto.

The cheese plate was absolutely divine and the triple creme quickly became a new favorite.

While the town is incredibly sleepy, it’s a nice stopping point for an evening when you need nothing else but a good meal and better company.
