New Year’s Cabbage Pancakes

Need an extra dose of luck for new year’s? I think we all do/did this year. Last year I did not eat the “lucky” pork and cabbage, so this year, I was NOT chancing it. (Why is this kind of gross combo lucky again)? These pancakes are at least so fun that you’ll forget they’re a vegetable. Really, they could be a staple side dish for any veg you are trying to sneak out of the fridge and into the bottom of your belly. How lucky is that?

New Year’s Cabbage Pancakes

  • For the pancakes:
  • 4 c. shredded cabbage (just buy a coleslaw mix!)
  • 2 scallions
  • 3 eggs
  • 1 tsp. soy sauce
  • 1/2 tsp. sesame oil
  • 1/2 tsp. sea salt
  • 1/4 c. flour
  • For the dipping sauce:
  • 2 T. soy sauce
  • 1 T. rice vinegar
  • 1 T. mirin
  • 1 T. water
  • 1 tsp. sambal oelek
  • 1/2 tsp. sesame oil
  1. Combine all ingredients for dipping sauce and set aside.
  2. Combine all ingredients for the pancake batter.
  3. Heat canola or vegetable oil over medium-high heat until it spits.
  4. Pour ~1/3 c. of batter into hot oil and flatten pancake with spatula as it cooks. Brown 2-3 minutes and flip to other side.
  5. Serve immediately with dipping sauce.
