Need an extra dose of luck for new year’s? I think we all do/did this year. Last year I did not eat the “lucky” pork and cabbage, so this year, I was NOT chancing it. (Why is this kind of gross combo lucky again)? These pancakes are at least so fun that you’ll forget they’re a vegetable. Really, they could be a staple side dish for any veg you are trying to sneak out of the fridge and into the bottom of your belly. How lucky is that?

New Year’s Cabbage Pancakes
- For the pancakes:
- 4 c. shredded cabbage (just buy a coleslaw mix!)
- 2 scallions
- 3 eggs
- 1 tsp. soy sauce
- 1/2 tsp. sesame oil
- 1/2 tsp. sea salt
- 1/4 c. flour
- For the dipping sauce:
- 2 T. soy sauce
- 1 T. rice vinegar
- 1 T. mirin
- 1 T. water
- 1 tsp. sambal oelek
- 1/2 tsp. sesame oil
- Combine all ingredients for dipping sauce and set aside.
- Combine all ingredients for the pancake batter.
- Heat canola or vegetable oil over medium-high heat until it spits.
- Pour ~1/3 c. of batter into hot oil and flatten pancake with spatula as it cooks. Brown 2-3 minutes and flip to other side.
- Serve immediately with dipping sauce.
