Merry Christmas! Hope that everyone had the loveliest of holiday. This month has been absolutely mad – in the best way- but I am wiped! I actually just hit the grocery today for the first time in the month of December, having been out-of-town and following it up with lots of holiday festivities. I didn’t bake one single thing this year. Hell, I barely scrambled eggs once or twice. However, I did spend few days with my charming uncles who baked my new favorite Christmas cookie. No doubt that this will be part of next year’s repertoire. While they aren’t much to look at, these are buttery, but light, and packed full of nutty flavor. I wanted to share something festive with you all this year (and mostly book mark this one for next year for myself ;-).
Pecan Sandies
“Makes a bunch”
- 1 c. margarine, softened
- 1 c. vegetable oil
- 1 c. sugar
- 1 c. confectioners’ sugar
- 2 eggs
- 1 tsp. vanilla
- 4 c. flour
- 1 tsp. baking soda
- 1 tsp. cream of tartar
- 1 tsp. salt
- 2 c. chopped pecans
- 1/2 c. white sugar for decoration
- Preheat oven to 375F.
- Cream together margarine, oil, sugar, and confectioners’ sugar until smooth.
- Beat in eggs, one at a time. Add vanilla.
- Combine the flour, baking soda, cream of tartar, and salt and stir into the wet mixture.
- Mix in pecans.
- Roll dough into 1″ balls and roll each ball into remaining sugar.
- Bake for 10-12 minutes.
