Cacio e Pepe. Sort of.

Most recently I decided to ride the Chrissy Tiegan streak after my IG high of her liking my post. Swoon. So next up was a really indulgent dinner for one! Cacio e Pepe, Tiegan style!

Chrissy’s version has the addition of argula, pancetta, lemon, and red pepper flakes. While I love all of these things, I just didn’t love this. Her recipes have been hit after hit, but this one just fell short for me.

And if I’m going to indulge in pasta, it has to be GREAT. This just wasn’t, so I’ll spare you the details. Although, I did forget to reserve any pasta cooking water! I’m sure that would have helped the consistency, but likely not the flavour. On to the next one…
