With the Chap’s arse early schedule and my annoyingly long commute, we are always in search of the next best breakfast on the go. The Chap said he was missing things he could just grab from the freezer and take, so I did what any girlfriend would do and made two dozen brekkie sammies. We do nothing in moderation.
Unless you’re counting carbs, these are pretty healthy! I used low fat cheese, fat free ham, and no butter with my eggs. I call them Mile High Pile Drivers. Basically, it’s a Denver omlette for your hand, but who wouldn’t want to eat something with such a name.
First up, you chop up an onion and green pepper. Since you are looking to be healthy after coming back from vacation, you’ll also need to clean all of the vodka bottles out of your freezer. Make yourself a *healthy* stiff cocktail. That’s vodka, topped with pamplemousse La Croix (no calories) and this one topped with a bit of OJ, because…stiff. Repeat that one to two times.
You won’t need scissors for this, but here are our kitchen shears anyway.
Coat a 9×13″ baking sheet with spray and toss in your veg. Top with a dozen eggs that you’ve whisked well. Salt and pepper, then pop that sucker in the oven for 20ish minutes at 375F.
Immediately add a layer of deli ham and low-fat cheese slices. Bake another seven minutes until it’s all melty.
Top with bun tops! Egg hats, if you will. Cut and serve out bun/egg layer. You’ll have extra eggs, so cut them into squares and double up on it. You have an updsidown sandwich at this point. Just add the bun bottoms and serve an army! Or, wrap individually and pop in the freezer for a breakfast on the go.
Toast or microwave for a couple minutes, and voila, hot breakfast in your hand every morning!
